s some of you may know, I’ve recently returned from a trip to Hawaii, where the air is sweet, the sun is warm and the flowers just striking.

Typically, I have found that when I travel and return from a wonderful trip, certain aspects of in my life are moderately altered from my experiences. When I came back from Italy, my taste buds shifted to truffle olive oil, fresh parmesan and my favorite, the Sangivose grape. Added to that, is now fresh fish tacos. This is not a new concept at all, but it is an easy way to incorporate fresh fish into you daily evening meal. Grilling fish is extremely simple, and you can flavor it up with guacamole, spicy hot sauce, lettuce, mango/pineapple salsa, anything goes!

Grilled Fish Tacos

Ingredients:

  • 1/3 lb fresh fish steak
  • soft taco wrap
  • fresh avocado (or prepared quacamole)
  • 1 lemon
  • spicy sauce
  • grill pan
  • olive oil
  • spices to taste (wasabi, pepper, etc)


Preparation:

  • Take your favorite fish steak (swordfish, salmon, sole, etc), and slice it in strips.
  • Marinate it or season it as you prefer.
  • Put a few teaspoons of olive oil in a grill pan and heat.
  • Put in the fish and grill until done. (be careful, do not overcook your fish).
  • Place the fish in the middle of a warmed soft taco wrap, Squeeze a slice of lemon over the fish, add a few slices of avocado (or a few teaspoons of guacamole), wrap and go! Having the wrap allows you to commingle spices, and other veggies in your taco, and it makes it fun!

Great if you are on the go, and great if you want to eat and watch a movie!
